Corn Cups

Preparation : 10 minutes
Cooking Time : 40 minutes
 
Ingredients:
     
Sweet corn : 450 gms
Chopped onions :

2

Chopped coriander :

1 tsp

Chopped Green chillies : 3
Juice of lemon : 1
Large loaf bread butter : 1
Salt : to tast
Chilli sauce to serve :  
 
Preparation:
Heat the oil thoroughly in a vessel, add the onions and cook for a little time.Add the corn, chillies, coriander, lemon juice and salt. Cook for 2 minutes. Stamp out rounds from the slices of bread with biscuit. Roll these rounds a little. Grease a pastry tin with butter. Put one round in each cavity. apply a little butter on each round. Bake in a hot oven at 400F.for 20 minutes or until crisp. Fill the bread cases with a little corn mixture. Bake again at the same temperature for 10 minutes.
 
Put one drop chilli sauce on each cup and serve.
 
Store the bread cases in an air - tight tin.
